For me, as a mom of seven, I find it a bit stressful to juggle all the needs of my family in the mornings. I enjoy having a time of reading my Bible and spending a few quiet moments in the presence of the Lord. This is such an important time of prioritizing my time and laying my schedule before the Lord. This is a time of renewing vision with training needs and the trouble spots in our household.
As the children are waking up they get their Bibles out for a bit of Bible reading on their own. I want to be available to read with them and pray together if something comes up. These can be such sweet times.
But juggling all this in the wee hours of the morning along with waking up with Baby Dora or the little ones who come in the middle of the night for some comfort, or to sleep with Momma and Daddy...how is a Momma to do all this??
And did I mention having breakfast on time so that we can start school (homeschool) on time?
This Momma simply cannot manage all this!
Enter breakfast cake! We do enjoy granola and grapenut crunchies, but both of those take more time. This cake is so easy. I just mix up the batter, bake, and it goes into the pantry for the next morning's breakfast. It's so versatile. Are you hungry for blueberries? Are Apples in season? How about a pineapple upside-down cake? Or add a glob of peanut butter! How about cinnamon spice cake?
I triple this recipe and have breakfast cake with milk for the week. Serve with fruit and yogurt.
1 cup butter or palm shortening
1 cup honey, sucanat, coconut sugar, or maple syrup
1 tsp. stevia powder
1 tsp. vanilla
1 cup milk (slightly less if using sucanat or coconut sugar)
1/2 teaspoon salt
3 tsp. baking powder
3 cups fresh ground flour
- Preheat oven to 350.
- Mix in order given, pour into cake pan, fold in about 2 cups blueberries or fruit of your choice, then bake at 350 degrees for 30 minutes, or until golden brown. Note: If using apples, shred them instead of cutting chunks.
